This baked banana porridge makes a delicious and healthy breakfast- great for using up brown bananas too.

Ingredients: (items marked * can be bought from us) Total cost will be around under £1.00 even if using Oat Milk)
- 2 small bananas, halved lengthways
- 100g jumbo porridge oats* (total cost 25p)
- ¼ tsp cinnamon* (around 2p)
- 150ml milk* of your choice, plus extra to serve (we stock oat milk on tap)
- 4 walnuts, * roughly chopped (around 20g or 38p)
Method:
- Heat the oven to 190C/170C fan/gas 5. Mash up one banana half, then mix it with the oats, cinnamon, milk, 300ml water and a pinch of salt.
- Carefully pour into a baking dish.
- Top with the remaining banana halves and scatter the walnuts on top.
- Bake for 20-25 mins until the oats are creamy and have absorbed most of the liquid.
- Serve the baked banana porridge with a drizzle of honey, or some chia seeds if desired.

Bananas and dairy are a good source of the amino acid tryptophan, which the body needs to make the feel-good hormone serotonin. When eaten with a carb source such as oats, the brain can absorb the tryptophan more easily.
