We held a wonderful chocolate truffle making workshop at the store back in December, and many of you have asked for the recipe! This one comes courtesy of our wonderful team member (and qualified nutritionist!) Danielle. You can find out more about her amazing work here. Enjoy!
Ingredients: (items marked * can be bought at Zero) Makes 25-30 truffles, so can be halved if necessary.
For the filling:
- 300g dark chocolate chips (preferably 70% cocoa)*
- 300ml double cream- plant based cream will also work
- 25g softened butter (vegan or dairy)
For the coatings:
- Cocoa powder* for dusting
- Toppings as desired- freeze dried fruits*, desiccated coconut*, chopped hazelnuts* etc.
Method:
1. In a pan on a gentle heat, carefully melt the chocolate chips and butter into the cream. A lower temperature with contant stirring is best so the chocolate truffle mixture doesn’t split or burn.
2. Scoop this mixture into a bowl and refridgerate for a minimum of 6-8 hours.
3. Remove the bowl from the fridge and if a little too firm to scoop into, leave for 10 minutes or so at room temperature. At the same time, prepare some smaller bowls with your toppings in and clear your sink for handwashing.
4. Using a metal spoon, scoop out a small amount of the chocolate truffle mixture and roll between clean, flat palms into a ball. If your mixture melts and gets sticky, prep your hands by running them under your cold tap.
5. Line up the truffle balls, and one by one, roll them in your toppings and place in a jar or tub of your choosing.
6. Admire your handiwork! The truffle will keep for several days in the fridge but can be taken out to be given as a gift if intended.
